What have you had for dinner

Chicken risotto. Every day, Avril, puts me on the spot, to ask me what I fancy for dinner the next day, so she can attempt to organise it. Stuck for ideas, I plucked out of the air - chicken risotto. I'd never made it from scratch, nor had she, so she Googled and came up with an authentic recipe....

She had collected the ingredients, we'd had a roast chicken for Sunday dinner, with a breast going spare, so she decided to make the risotto yesterday, for dinner. It turned out absolutely spot on. ;)
We often have chicken and pea risotto on a Monday with leftover chicken from the Sunday roast. I make my own stock on Sunday using the chicken frame and leftover vegetables. I use this recipe and also add some mushrooms. Very tasty.

That was the very same recipe she used. She was a bit worried it seemed to sloppy at the end of step 3, but it ended up just right. Two helpings for us on Monday, two more put in the freezer.

You can always tell if a risotto has come out just right. Put it in your bowl and it should be sticky enough to make a mini-mountain but not so sticky that if you give the bowl a couple of shakes, it will level off.
 
Avril still away, so today, with leftover chicken breast in the freezer from last Sunday - I'm having a go at making chicken a la crem. Chicken, mushrooms, onions, garlic, white wine, and of course cream. This morning, I got everything cooked, in the pan, just need to add the cream and simmer it, when I am ready to eat. I was planning to have rice with it, but there is no basmati rice, and so chips it is.

The dog gets the leftover chicken thigh meat, and a few surplus chips.

Sounds yummy. New potatoes or roast potatoes would be my choice.

Raja. A mixed meal from our local Indian. You get:
2 Poppadoms
Onion salad
Mint sauce
1 Naan
Tandoori chicken leg
Chicken tikka masala
Chicken Jalfrezi
Mutton curry
Vegetable curry
Pilau rice
Very tasty and more than enough for two - we couldn’t finish it all. All for £16.50 - thats near on a tenner cheaper than fish and chips for two. Order it over the phone and get there early and they sometimes give you a small beer on the house while you’re waiting. ;)
 
I sometimes do a batch cook of Bolognese sauce or chill con carne and freeze a few portions. Always tastes better after freezing I think.
