When I fit the new kitchen, I'll only have about 50mm between the top of the wall units and the 7'6" ceiling. This gap is too small to keep clean so I want to seal it off. I was thinking of putting plasterboard or MDF across the gap and painting it to match the ceiling.

Plasterboard would be quicker and I'm bound to have offcuts but I'm worried the easifill joints would crack as doors are slammed. An alternative would be to cut MDF to fit and glue it in place with silicone and finish off with caulking. Going back to plasterboard, I could seal the edges with PVA and glue that in place with silicone...

You could get some laminated chipboard or mdf that matches the doors of the wall units (same sort of colour or woodgrain) and cut yourself some fillets to fill the space above.
Personally, I'd set these about 10mm - 15mm back from the front and side edges of the wall units. Mitre the corners, or use some laminate trim to cover the cut ends (mitres look better imho. Dont forget to use mitremate or similar to fix together!). To fit them. place a line of silicon on the wall units 10mm back from the edge and just slide the fillets into position.
