Clearly your property was not suitable for a combi and the owners at the time were not well advised. This is unfortunate for you but should not be used as evidence that stored hot water systems are are always better.

Get your mains water pressure and flow rate checked and if its sufficient, I would convert to a combi. There are pros and cons but for the hot water usage you suggest, the benefits of a combi probably outweigh the drawbacks. 30kw will be powerful enough.
If you need to disconnect the water supply to the fill valve and its got a plastic thread, it may be worth swapping it for a new one with a brass shank. The plastic threaded shanks are very easy to cross thread and can be difficult to get leak free if the thread is damaged.
The dogleg connectors are awful and don't actually support the mixer. They also rely on a threaded joint within the wall which is a potential leak point. In this case you will have to re-use what's already there unless you want to be breaking out tiles.

Bar mixers generally have 3/4" connections which this one looks like it has. A new one should be a straight swap over. They usually come with shrouds which screw on first. I'd be filling around the pipes with silicon before screwing on the shrouds then mounting the shower.
