I would look at fire resistant foil backed plaster board. It will protect the brickwork (I agree it is good looking - but Ive been there and it is very sold even after pointing) and be relatively easy to install even for non plasterers. I did an extinct chimney in normal plaster board and...

...oh and remember to buy a bar stool next time with a rubber backing on the bottom to help prevent floor damage. Rubber is important as it ensures that stool stays gripped as well as protecting the floor. Make sure it is anti mark rubber though if your floor is finitely finished.
